Being a runner is what it is, you are exposed to suffer some kind of injury that leaves you KO, and in the dry dock. So I have no choice but to stop to be able to return to 100%, so let's go with an easy and sweet recipe to make myknee recovery more enjoyable .... Since I can't run...I'm going to write...maybe it will give me enough to write a book! Ha,ha,ha,ha!!!
This is a sweet potato sponge cake. Do you know that I discovered it recently? In my 40's!!! I had always seen them in the supermarket, but era one thing I had never taken the time to buy! I tried them the day before running the 2019 Barcelona Half Marathon. My friend Cristina and her husband José booked a table at El Buratino to eat together with Eva, Jordi and my family from Barcelona. It's a place with gluten free options...and when they brought out what looked to me like simple potatoes...uff...my diners saw me enjoying it so much that I think I ate my portion and everyone else's!!!!! Ha,ha,ha,ha!!!!
The sweet potato is a tuber, just like the potato, but it has a sweet taste on the palate.
Its energy content is composed of complex carbohydrates, sugars, vitamins and minerals. In terms of vitamins, it has vitamin A (beta-carotene, essential for skin, eye health and bone development), C, B6, B5, B1 and B2 among others. Regarding minerals, it has manganese, potassium, copper and iron, which makes it a very complete food.

Step 1
While we start making the base, we preheat the oven to 180 degrees.
We take a silicone mold and we put a baking paper. Then we mix all the dry ingredients together with the coconut oil. When we have a homogeneous paste, we spread it on the mold and take it to the oven for about 10 minutes.
Step 2
While the base is being made, cut the sweet potato in half and put it in the microwave for 10 minutes to "roast" it.
Once it is roasted, remove the skin (it is very easy) and beat it together with the two eggs and cinnamon to taste. You can also add more vanilla essence, depending on how sweet you are!!!!
Step 3
Place in the mold and bake in the oven for 25-30 minutes. Once cool, we put it in the fridge, since we will not unmold them until the next day.
